Having just noticed your email address, I should defer to you on the
question of who's Jewish, but I'm bored, so I did a search on the characters
and this is what I've found mentioned on various sites:

Pheobe writes a song with the line "spin the dreidle, Rachel" and Rachel
says she doesn't spin the dreidle. (She also says "Happy Channkah Monica"
and no one complains.)

According to another site, Jennifer Anniston isn't Jewish, but her character
is.

According to someone else's trivia contest, Ross and Monica are Jewish.

There's an episode where Ross tries to teach his son about Channukah, in
which his son says that he's part Jewish. (Ross might say that he is too,
but the scene works out to make that line ambiguous)

(Deduction time: If Monica and Ross consider themselves Jewish, that
suggests both their parents are. Their father definitely is, and while
Reform Judaism  currently considers children of a marriage where just the
father is Jewish to be Jewish (It's more complicated than that, but I'll
spare you the details), that wouldn't have applied when Monica and Ross were
growing up, so they wouldn't think of themselves as Jewish)

Someone from Warner Brothers once said that if you read between the lines,
you can figure out that Ross and Monica are half Jewish and Rachel is
Jewish.

There was an episode where Ross was shown cleaning a menorah, while Monica
got a package of christmas cookies from their mother.

Ok, looking for this stuff is getting boring. Time to do something else. (My
final conclusion: They make it up as they go along.)
